Frigid temperatures and tons of snow continue to persist in our part of the world right now. Actually, it has become so bad that getting out of the house has become a rare and exciting adventure. To help break up the monotony of being in our house and play Hungry Hippos yet again, I decided we would make a big breakfast this morning. I excitedly went to ask our toddler what he wanted and he quickly and emphatically replied “SNOWFLAKES!” Thankfully, it was still snowing rather heavily and my husband instantly said “Okay, snow cream it is!” I quickly put a bowl outside to collect the snow. While our snow was collecting, my husband, two boys, and I made sweet potato pancakes and prepared the rest of the snow cream ingredients (see our recipe below).
I think a new family tradition may be born – pancakes and snow cream for breakfast!
- 2 cups heavy cream (you can substitute milk or half and half for less rich snow cream in a pinch)
- 1 cup sugar
- 2 tsp vanilla
- 8 cups snow
Mix the first three ingredients in a large bowl. Add the snow and stir rapidly until thickened. Serve and eat immediately!
